These Mini Blueberry Galettes are one of my favorite summer-inspired treats. Each one is made with a flaky, golden 5-inch pastry crust, filled with a creamy layer of sweetened cream cheese, juicy sugared blueberries, and topped with buttery crumble for that perfect crunch.

Pro Tips for Perfect Mini Galettes

Keep Your Dough Cold: Cold pastry = flaky pastry. If the dough gets soft while assembling, pop them in the fridge for 10 minutes before baking.

Don’t Overfill: A few tablespoons of filling per galette is plenty too much and they’ll overflow.

Premade or Homemade your choice

You can use store bought jam instead of the berry mix if you prefer. You may also make your pie crust from scratch if you like.

You can make them mini or just keep the pie crust whole and layer the elements the same. the baking time may vary so keep an eye on it!

Preheat oven to 375°F and line a cookie sheet with parchment paper. cut 5” rounds into your pie crusts and place the round onto the baking sheet with 1/2 inch spacing.

In a bowl mix your blueberries, sugar and lemon together, set it aside.

Add your cream cheese and sugar in a stand mixer and combine it at medium speed for 2 mins. Scrape the sides and add the egg yolk and vanilla. once fully combined put it in a piping bag, set aside.

In a bowl prepare your crumble by mixing the brown sugar, salt, flour with a whisk. Add in the melted butter and set it aside. Time to assemble.

Make the egg wash by mixing the egg and water together and set aside. Layer your cheesecake filling and blueberries in the centers of the pie crusts leaving a quarter inch outside border uncovered. Fold in the edges and brush with egg wash then sprinkle the edges with a little sugar . Top with crumble and bake for 10-12 mins or until the edges are browned and the center is bubbling.

Once your galettes have cooled sprinkle them with powdered sugar and enjoy them as is or top them with whipped cream or vanilla ice cream.

8oz of cream cheese(room temp)

1 egg yolk(room temp)

1 teaspoon vanilla extract

1/3 cup granulated sugar

Cheesecake Filling

1 cup fresh blueberries

2 tablespoons granulated sugar

1 tablespoon lemon juice

Blueberry filling

1/4 cup light brown sugar

2/3 cup all-purpose flour

4 tablespoons unsalted butter

1/4 teaspoon salt

Crumble topping

1 egg

1 tablespoon water

Egg Wash

1 package of premade pie crust
