Mini Funfetti Pancakes – A Stack of Sprinkle-Filled Joy

Is there anything better than waking up to pancakes? Actually, yes. Waking up to mini funfetti pancakes that look like a birthday party and taste like happiness.


These tiny stacks of joy are a family favorite in our house. They bring the same fluffy comfort of classic pancakes, but with a twist: they’re bite-sized, loaded with rainbow sprinkles, and just so fun to make and eat. Every time I serve them, whether it’s for a sleepy Sunday breakfast or a special morning surprise, I get smiles all around.


The best part? They come together with simple pantry staples and a splash of fun. You don’t need any fancy tools, just a bowl, a pan, and your favorite rainbow sprinkles (jimmies work best!). They’re also super customizable: add chocolate chips, top them with whipped cream, or serve them on sticks for a pancake pop brunch board.


So whether you’re making these for a birthday breakfast, holiday morning, or just because you want something cute on your plate, you’re going to love this recipe.


Ingredients:

  • 2 cups all-purpose flour

  • 4 teaspoons baking powder

  • 1/4 cup granulated sugar

  • 1 teaspoon salt

  • 2 eggs

  • 1 1/2 cups whole milk

  • 3 tablespoons unsalted butter, melted

  • 2 teaspoons vanilla extract

  • 1/4 cup rainbow sprinkles (use quality jimmies to prevent color bleed)


Directions:

  1. In a large bowl, whisk together flour, baking powder, sugar, and salt.

  2. In a separate bowl, beat the eggs, then stir in the milk, melted butter, and vanilla.

  3. Pour wet ingredients into the dry ingredients and stir until just combined. A few lumps are fine, don’t overmix.

  4. Gently fold in the sprinkles. Stir just enough to distribute without streaking the batter.

  5. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or spray. Drop 1 to 2 tablespoons of batter per pancake. Cook 1–2 minutes per side until golden and fluffy.

  6. Stack them high, drizzle with maple syrup, and top with whipped cream or more sprinkles for extra fun!



Tips:

  • Want them extra fluffy? Let your batter sit for 5 minutes before cooking.

  • Make a big batch and freeze the extras in a zip-top bag. Reheat in the toaster or microwave for quick weekday breakfasts.

  • Serve them on skewers with fruit for a fun brunch platter.
