Sugar cookie bars

If you love sugar cookies but don’t love rolling, cutting, and baking tray after tray, these Sugar Cookie Bars are the perfect solution! They have all the buttery sweetness of a classic sugar cookie, baked in one pan, then topped with fluffy vanilla bean frosting and (of course) sprinkles.
These bars are quick to make, slice up beautifully, and are ideal for parties, school treats, or anytime you just need a sugar cookie fix without the extra work.
Ingredients
For the Bars
½ cup (1 stick) unsalted butter, softened
1 cup sugar
1 egg
2 tbsp vanilla extract
¼ tsp salt
1⅔ cups all-purpose flour
1 tbsp heavy cream (or whole milk)
For the Frosting
½ cup (1 stick) butter, softened
2 cups powdered sugar
2 tsp vanilla bean gel
½ tsp salt
Sprinkles (because they make everything better!)
Directions
Preheat your oven to 350°F and line an 8x8-inch pan with parchment paper.
In a large bowl, cream together the butter and sugar until light and fluffy. Mix in the egg, vanilla, salt, and heavy cream, then stir in the flour until just combined. Spread the dough evenly into the prepared pan.
Bake for about 23 minutes, or until the edges are lightly golden. Let the bars cool completely in the pan.
While the bars cool, make the frosting by beating together the softened butter, powdered sugar, vanilla bean gel, and salt until light and fluffy.
Spread the frosting evenly over the cooled cookie bars and finish with a generous handful of sprinkles. Slice into squares and enjoy!
Tips & Tricks
Double the recipe: Bake in a 9x13 pan if you’re making these for a crowd.
Holiday swap: Change up the sprinkle colors for any occasion — red and green for Christmas, pastels for Easter, or rainbow for birthdays.
Frosting flavor twist: Add a tiny splash of almond extract or lemon zest to the frosting for a fun variation.
