Looking for a cookie that’s as colorful as it is delicious? These Fruity Pebble Sugar Cookies are buttery, soft, and loaded with everyone’s favorite fruity cereal. They’re finished with a drizzle of white chocolate and a sprinkle of extra cereal on top, making them as pretty as they are tasty.
These cookies are a guaranteed hit with kids and grown-ups alike, perfect for birthday parties, bake sales, or when you just need a cheerful treat.
Ingredients
1 cup (2 sticks) unsalted butter, softened
1 ¼ cups granulated sugar
1 large egg + 1 egg yolk
1 tsp vanilla extract
2 tsp baking powder
2 ½ cups all-purpose flour
½–1 cup Fruity Pebbles cereal (use more for extra crunch!)
½ cup white chocolate, melted (for topping)
Extra Fruity Pebbles for garnish
Instructions
Preheat your oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, cream together the butter and sugar for about 2–3 minutes until pale and fluffy. Mix in the egg, egg yolk, and vanilla until fully combined.
Add the baking powder and flour and mix until a smooth, soft dough forms. Fold in the Fruity Pebbles. start with ½ cup and add more if you love that extra fruity crunch.
Scoop the dough into balls and place them on the prepared baking sheet, leaving about 2 inches between each one.
Bake for 10–12 minutes, just until the edges are lightly golden. The centers should still look soft, that’s what makes them chewy once they cool.
Once the cookies are completely cooled, drizzle them with melted white chocolate and top with more Fruity Pebbles for a fun, colorful finish.
Tips & Tricks
Chill the dough:Â For thicker cookies, chill the dough for 30 minutes before baking.
Extra pretty drizzle:Â Put your melted white chocolate in a piping bag or zip-top bag with the corner snipped off for neater lines.
Swap cereals:Â These are also great with Cocoa Pebbles or Fruit Loops for a twist!
