Sometimes you just need a dessert that makes people smile the second they see it. These Birthday Rice Krispies Treats are exactly that, bright, colorful, and topped with just the right amount of sweetness.
I started with the classic marshmallowy rice cereal base, but gave it a party-ready makeover: sprinkles mixed right into the gooey treats, a smooth layer of white chocolate on top, extra sprinkles for good measure, and the cutest finishing touch, a cherry on top.
Why You’ll Love This Recipe
Quick & Easy: No oven needed, just a stovetop and a pan.
Festive & Colorful: Sprinkles mixed in and sprinkled on top for double the fun.
Sweet Surprise: The white chocolate layer adds creamy richness.
Perfect for Parties: Easy to make in big batches and customize with your favorite colors.
Ingredients:
* 3 cups rice crispy cereal
* 8 oz marshmallows
* 1/4 cup unsalted butter
* 1/4 cup rainbow sprinkles
* 1/2 cup white chocolate chips (divided)
* Buttercream frosting (for topping)
* Maraschino cherries (for topping)
Instructions:
1. In a large microwave-safe bowl, combine marshmallows and butter. Microwave for 30-second , stir until fully melted and smooth.
2. Let the mixture cool slightly, then stir in the rice crispy cereal until evenly coated.
3. Gently fold in 1/4 cup of white chocolate chips and rainbow sprinkles.
4. Press the mixture into a greased 8x8-inch square pan, flattening the top.
5. Melt the remaining 1/4 cup of white chocolate chips and pour it over the top. Finish with extra rainbow sprinkles.
6. Place the pan in the refrigerator to set, about 10-15 minutes.
7. Once firm, cut into squares. Top each treat with a swirl of buttercream frosting and a cherry.
